Ever since I saw ABC’s “The Food Revolution”, I have been dying to try the healthy version of Sloppy Joe’s that they serve at one of the schools. However, I could not find the recipe on Jamie Oliver’s website anywhere (if you happen to have a link please share)! So, I improvised, threw some stuff together, and hoped for the best. Luckily, it came out delish! (Photo source).
Veggie Packed Sloppy Joe’s
Ingredients
1/2 cup mushrooms
3 celery sticks
4 cherry tomatoes
1/2 green bell pepper
1/2 red bell pepper
1/2 cup black olives
1lb lean ground beef (or turkey)
1 packet of Sloppy Joe seasoning
1 cup of water
Directions
Chop and puree all veggies (I chopped them all up and threw them into my magic bullet so it made a paste).
Brown the ground beef (or turkey) and drain any fat.
Add 1 cup of water, the seasoning, and paste to the meat. Bring to a boil, and then let simmer for 10 minutes.
Serve on a roll & enjoy!

I think mushrooms can be snuck into almost anything… and I also find another good one is that you can put black beans into ground chuck before making burgers. That way, you’re cutting into the fat consumption a bit without sacrificing in taste at all (seriously, you can barely notice)…

For a veggie-packed meal, I would suggest some type of mexican dish involving salsa & pea guacamole (it’s guac made with avocado + peas). That’s like…15 veggies right there

Loving this recipe, my boys love sloppy joes!!!!
I get my veggies in by throwing tons of veggies in a big spinach salad !!! I usually have a sald for dinner every night, I always have some kind of protein in there too, such as fish or some kind of soy protein!

power to the protein! I’m loving this idea with the pureeing of veggies and seasonings. I definitely could go for some Joe’s without the slop (I have enough stains to remove on my clothing unfortunately)
