Brendan’s sister Kate is leaving today to go back to school so I joined his family last night to have some snacks, drink some wine, and watch the sunset at a near-by winery.

Kathy’s Bruchetta-to-go Recipe
Ingredients
- Olive Oil
- Garden grown tomatoes
- Garden grown basil
- Ciabatta bread or french bread
- Grated cheese
Directions
- Cut up the ciabatta bread. Drizzle olive oil on and toast both sides in the oven (broil setting). Pack in a to-go container.
- In a separate to-go container, dice tomatoes and mix with basil. Top with olive oil.
- Pack your favorite grated cheese.
- Once you get to your location, add the tomato/basil/oil mix over top of the bread, and top with grated cheese!
