Baked Beans and Sweet Potatoes

To be perfectly honest, when I first started reading healthy living blogs I was completely grossed out taken back by many of the things these beautiful ladies were singing their praises to. I can’t just make oatmeal from a packet anymore? I have to kale chips instead of regular potato chips? You want me to do WHAT with nut butter?

You have seen me not only try, but love, each of these things through the months I have been blogging on this site. So I decided to give in to the one combo that I could not possibly imagine being good at all… sweet potato topped with baked beans.

Somebody slap me for waiting so long to try this.

It literally takes only a few minutes to make if you use the microwave, and you have a completely delicious and filling dish (or side dish if you eat big meals like I do).

Microwave Directions:

  • Poke holes in the sweet potato with a fork, wrap in a damp paper and microwave for 5-7 minutes (depending on size).
  • Then ‘nuke some baked beans in a bowl.
  • Pour the baked beans over the sweet potato.
  • Ask someone to slap you for not having tried this sooner.

We love sweet potatoes, and like baked beans, but baked beans ON TOP of a sweet potato??? It looks and sounds gross, but I’m willing to give it a try.

I’ll get back to you in a week or so.

I haven’t really tried any recipes I’ve found on fitness blogs yet, but have a few wrote down so I’ll try them hopefully next week.
