What is this just a food blog or something? I promise to get back to fitness soon, I have just become so recipe and kitchen obsessed lately that create workouts have been taking a back burner to creative eats! :)

Mini meatloaves topped with (oven) caramelized onions

Ingredients:

  • 1/2 cup breadcrumbs
  • 1 1/2 pounds of ground beef
  • 1 onion finely chopped
  • 1 onion thinly sliced
  • 1 egg
  • 1 tablespoon worcestershire sauce
  • 1 tablespoon balsamic vinegar
  • 4 tablespoons butter
  • salt and pepper to taste

Directions:

  1. Preheat oven to 375.
  2. In a bowl, combine all ingredients except for the butter and sliced onion. Get messy and do it with your fingers instead of a spoon to mix thoroughly.
  3. Divide into four mounds on a baking sheet and use your hands to shape them into little loaves.
  4. In a separate baking sheet, mix butter and onions and spread across one layer.
  5. Bake for 45 minutes, occasionally stirring the onions.
  6. Serve the meatloaves with the onions on top!

I served my mini-meatloaves with mashed potatoes and roasted squash!

I’m not a huge fan of meatloaf, but this actually looks pretty good. I hardly ever buy ground beef though. I wonder how it would taste with ground turkey?

I’m a big fan of meatloaf – now if I could only get my hubby to like it. He does really like Balsamic so maybe this recipe will do the trick.

Don’t apologize for the awesome food you’ve been sharing. I think I am going to try this recipe next time I actually have time to cook dinner. I love caramelized onions, but I’ve never done them in the oven before – brilliant!

I don’t eat meat but I think the idea of mini meatloaves is cute! Maybe I could make mini veggie loaves.. or something. ;)

Carmelized onions? I’m there!! I love onions and garlic.. haha basically anything stinky :) Can’t wait to add some deliciousness to my next turkey-loaf!
