Did you know the average pomegranate contains around 800 seeds? While these bad boys can be a pain to dissect, they are well worth the time. They are extremely low in calories and are great cancer fighting foods — not to mention completely delish!
So take my obsession with pomegranates, my boredom, and my desire to find a salad that I actually enjoy, came the creation of my new favorite thing..
Pomegranate Vinaigrette
- Juice & seeds from 1 Pomegranate
- 3 Tablespoons of Red Wine Vinegar
- 4 Tablespoons of veggie oil (olive if you will use all in one sitting)
- 1 Tablespoon honey
- I tablespoon water
- Salt and pepper
Pour over a spinach, apple, and sunflower kernel salad to be completely amazed.

This dressing looks fantastic. I’m a big fan of pomegranate. In fact, having it right now as a snack – pomegranate seeds with cottage cheese. Pretty & delicious.

Ooooh that sounds fantastic! I will definitely be trying this dressing. I love pomegranates and when it comes to dressings the vinaigrette are always my favorite.
