Spiced Apple Oatmeal Cookies

One of the 4,334,556 reasons I love fall (see me for full list), is spending lots of time in the orchards with friends doing this:

..and then coming home and doing stuff like this:

Spiced Apple Oatmeal Cookies

Ingredients:

  • 3/4 cup butter, softened
  • 3/4 cup white sugar
  • 3/4 cup packed light brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 3/4 cups rolled oats
  • 1 apple

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Peel one large apple. Dice into tiny pieces.
  3. In large bowl, cream together butter, diced apples, white sugar, and brown sugar until smooth.
  4. Beat in the eggs and vanilla until fluffy.
  5. Stir together flour, baking soda, cinnamon, and salt. Gradually beat into butter mixture. Stir in oats. Drop by teaspoonfuls onto ungreased cookie sheets.
  6. Bake 8 to 10 minutes in the preheated oven, or until golden brown. Cool slightly, remove from sheet to wire rack. Cool completely.

Best. Cookie dough. Ever.

These look delicious! I have a huge pile of apples from the orchard that need to be used up so this will definitely come in handy. :D

I love apple orchards! My friends and I went to this awesome apple orchard & winery combo a few weekends ago. That means we go to nibble on apples while drinking wine. It was a lovely day, to say the least. :)
