Turkey Cold-Cut Quiche

Turkey Quiche

There is nothing I hate more than wasting left over cold-cuts. So I put my thinking cap on, starred at the endless pile of eggs we had in the ‘fridge, and put my left overs to good use!

Turkey Cold-Cut Quiche

Ingredients:

  • 1 pie crust
  • Left over shredded turkey meat (I used about 1 cup)
  • ¼ cup diced onion
  • 1 cup shredded low-fat cheddar cheese
  • 3 eggs
  • 1 cup of milk
  • 1 cup broccoli
  • Pinch of salt
  • Pinch of pepper

Directions:

  • Preheat oven to 375.
  • Press crust into pan.
  • Layer the ingredients as follows: Turkey, Broccoli, Onions, Cheese
  • Mix eggs and milk together (along with salt and pepper if you like these) in a bowl.
  • Pour egg mix over pie.
  • Cover with aluminum foil and cook for 45 minutes.
  • Remove foil and cook for an additional 15.
  • Enjoy! :)

Ohh – love this idea – we had quiche last night…seems like such a perfect way to use up cold cuts!
