You know I am a quiche-addict, I think it goes without saying at this point. So why the name “western” for this one? Because other than the mushrooms, it has all of the same ingredients as a western omelet!
Original, I know. If you haven’t tried one of them yet, here are the past two I’ve tried out:
Western Quiche
Ingredients:
- 1 pie crust
- 1 diced red bell pepper
- 1 diced green bell pepper
- 1/2 diced onion
- 1 cup shredded low-fat cheddar cheese
- 3 eggs
- 1 cup of milk
- Pinch of salt
- Pinch of pepper
Directions:
- Preheat oven to 375.
- Press crust into pan.
- Layer the veggies and top with cheese.
- Mix eggs and milk together (along with salt and pepper if you like these) in a bowl.
- Pour egg mix over pie.
- Cover with aluminum foil and cook for 45 minutes.
- Remove foil and cook for an additional 15.
- Enjoy!

All the quiche options sound great. One of the things I like to do to lighten up my quiche is to swap out the crust with mashed potatoes. Sooo good.
