The video below shows my top tip for a crispy skinned roasted chicken — creating an air pocket between the skin and the meat! In this video I use a straw (sometimes you can actually blow into the straw to create the pocket, but in this case I use it manually). Seems easy enough but it makes a huge difference!
Once you are done, stuff a bay leave in between for flavor, rub the skin down with oil and some seasoning, and bake for 45 minutes on 350!
