Honey Roasted Root Vegetables (and lots of snow!)

We got somewhere between 18-24 inches of snow at my house yesterday. INSANE right? I could barely even find my car. Oh.. there it is..

This resulted in lots of sitting around the new fireplace and playing on the computer.

While the bf was sitting about 5 feet away, I decided to email him this:

Which lead him to respond with..

..without either of us saying anything outloud, haha! Can you tell we were going a bit stir-crazy yesterday? So, after drooling over Tina’s Honey Roasted Root-Veggies, I decided to alter it a bit and give it a try myself!

Honey Roasted Root-Veggies

Ingredients:

  • 1 bag of parsnips
  • 1 bag of carrots
  • 1 turnip
  • 2 sweet potatoes
  • 1/2 cup honey
  • 4 tablespoons of olive oil
  • Pinch of salt

Directions:

  • Cut all veggies into small cubes and put into a brownie/casserole pan.
  • In a small bowl, mix together honey, olive oil, and salt and pour over veggies.
  • Bake at 450 for 40-45 minutes.

It came out so delicious!! I had never had turnips or parsnips before and I have to say I am a fan of both now!

I did sweet potatoes with honey once- so good. It’s like the honey carmelized a little… I highly recommend them and will have to experiment with other types of veggies…

I think we’re heading up to Tahoe in a few weekends. I’m looking forward to hanging out in the snow even though I am not adequately prepared for it. I don’t really own snow gear. :P

Love love love those photos! I miss me some snow! Looks like the cat loves your new fireplace. We love sweet potatoes but I’ve never made turnips or parsnips. The pic looks really good so I think I’ll give the recipe a try.

Crazy about your car! We got a ton of snow here too! I think 18inches but that’s the craziest photo I’ve seen yet! I had no idea it was a car under there

That is a crazy amount of snow. Georgia pretty much shut down with 5 inches of snow, so I can’t imagine what would happen if we ever got THAT much.
