In an effort to get rid of leftovers while being completely snowed in, a heavenly breakfast was born. I took some left over quinoa (containing some chopped up red peppers and diced onions in it) and mixed it with some shredded mozzarella cheese, a splash of milk, and 1 egg to create this beautiful, nutritious, and tasty omelet:
Despite it’s perfect round shape, I swear I am not good at egg flipping or omelet making. Let me introduce you to my handy helper:

How cute is this thing?? I love the Egg man at the end of it! And honestly, despite all of the silly kitchen products out there, this one actually comes in handy if you are like me and have no flipping skills.
The BF had cooked up some sausage we had from one of our roommate’s trips to Prague so I had some of that on the side as well. Those Czechs know how to put together tasty meat, that’s for sure!

I am a personal development book ADDICT, and after a nice phone call with Jenny Blake yesterday, I couldn’t be more inspired to get the ball rolling with some of my dreams and ideas!

Oh. My. Gawd. JEN! When did you say you couldn’t cook? Must of been a long time ago, because you’re pretty amazing! Quinoa omelet…..never would of thunk it! Way to go, looks so so so good!
I am staring out the window to a beautiful snowfall this morning. We are not getting NEARLY as much as you got (I think?) But it’s supposed to keep falling until 7pm. I have no food in the house except leftovers and Hope’s cookies that my evil husband brought home. He KNOWS I was going on a cookie detox too…I think he likes me fatter as pregnancy progresses, haha.

I love days when you get to read all day. How is the 4 hour work week? I have never read it. To be honest I would prefer never to work and just get paid.

That looks delicious! I’m also a TERRIBLE egg flipper. I usually end up just burning mine on both sides, which is not a very big deal since I love crispy eggs. But sometimes…a pan like that would probably come in handy
